Mood: poor and lazy
Yes those are moods. Yes, they plague me simultaneously. Sidebar: paying bills is a terrible thing. How do people do this month to month, without spiraling into a black hole of depression? If you have found a way, please let a girl know.
Anyhoo… I’m hungry and broke, so let’s make some salad! The best thing about keeping my backyard garden is that it feels like having free food all of the time. Actually, the best thing about having my garden is having a roommate that does all the work for you. Observe, Kendall hard at work on that budding arugula. This was a few months ago when it was just starting to sprout.
For this salad, I plucked some greens from my lettuce bed, so all I had to buy was the radicchio — which only set me back a cool 89 cents. This comes in handy at the end of the month in that magical time after bills and before paycheck. I am an adult now! I reject ramen! I’m making grilled salad instead.
1 head of radicchio
A handfuls of salad greens
1 tbs honey
Salt and pepper
This is a lazy recipe, and an even lazier recap. Preheat your grill to med-high. Higher heat equals faster cooking, perfect for optimal laziness. Quarter the radicchio and rub it with some olive oil, salt, and pepper. Slap it on the grill, and remove when the grill down-side is nice and charred. No need to flip and grill the other sides. See? Laziness.
For the dressing, I like to shake all the ingredients in a mason jar. Squeeze in the juice of a lemon, and add equal parts olive oil. Then, squeeze in about a tbs of honey, and give it an initial shake to combine. Once the honey is dissolved, add a good ten cracks of black pepper, and a mound of grated Parmesan cheese. If you need an exact amount for this recipe, we can’t be friends. Shake again. At this point, add salt to taste. The parm is salty already. Blah blah blah, you know the drill.
Assemble! Arrange your radicchios with some of the raw greens, and spoon over some dressing. Briefly feel better about your life. Repeat if necessary.
- 1 head radicchio
- 1 handful of salad greens
- Extra virgin olive oil
- 1 tbs honey
- Parmesan cheese
- 1 Lemon
- Salt and pepper
- Preheat your grill to med-high
- Quarter the radicchio and rub it with some olive oil, salt, and pepper
- Grill until 1 side is nicely charred, and remove
- For the dressing, mix juice of 1 lemon with equal parts extra virgin olive oil
- Add 1 tbs honey, salt and pepper, and a handfull of freshly grated parmesan cheese
- Arrange the radicchio with the raw greens and spoon over the dressing
